Leek Soup

Last night I made leek and potato soup for the very first time and it was delicious. Who knew leeks were like a giant tasty scallion? I enjoyed peeling back the layers of my 3 large leeks to find the fragrant white stalks. However, I didn't enjoy washing each piece of the leek individually. Next time I'll have to find an easier way to clean it.


The best part of the whole process was cooking the chopped leaks and butter over the stove before the broth and potatoes went in the pot. The smell was fantastic! I wish I could capture the smell and share it with you on this blog. For now a simple visual image will have to do, but I am telling you, it does the smell no justice!
